Rendang Nachos
A holy matrimony between my favorite slow-cooked beef curry and my all time favorite pub snack, rendang and nachos on one plate. Double awesomeness on one plate. It is healthy too, I mean it is covered with a mountain festive colored fruits, so it must be healthy.. maybe..
Anyway, I am not here to discuss about what is a healthy snack, I am here to share my latest craving recipe, so for the love of rendang and nachos, here is Rendang Nachos...
Ingredients:
1/2 kg of pre-made rendang (you can have the recipe from here, or cook it using an instant mix package)
a bag of tortilla chips
Simple salsa:
1/2 red onion, chopped
1 or 2 tomato, chopped
1/2 yellow bell pepper, chopped
salt
Jalapeno, optional (I skipped this one because the rendang is already spicy enough for me)
1/4 cup cilantro leaves or parsley (finely chopped), I skipped this one as well
Combine all the salsa ingredients in a bowl and set aside for the flavor to mix
Toppings:
1 cup of pitted and sliced black olive
1 ripe avocado, slice thin
500 gr shredded tex mex cheese
sour cream
That's all the ingredients I used, now let's assemble this awesome dish!
- Arrange the tortilla chips on the bottom of a big platter (I used the one to bake pie),
- Grab a spoonful of rendang and spread it evenly on top of the chips,
- Sprinkle a layer of the shredded cheese,
- Sprinkle a spoonful of black olives,
- Throw another layer of tortilla chips,
- And another layer of rendang,
- And sprinkle another handful of the shredded cheese,
- Put the nachos platter in a preheated oven (350 F) for 10 minutes (or until the top layer of cheese is melted),
- Take the nachos platter out of the oven and sprinkle all the toppings and the simple salsa to cover the surface of the nachos,
- Spoon few dollops of the sour cream on the nachos too,
- Turn on netflix and enjoy this yummy nachos while enjoying your favorite film, live is good!!
PS: You can nuke the nachos instead of put it in the oven to melt the cheese, take less time although not as good.
