A holy matrimony between my favorite slow-cooked beef curry and my all time favorite pub snack, rendang and nachos on one plate. Double awesomeness on one plate. It is healthy too, I mean it is covered with a mountain festive colored fruits, so it must be healthy.. maybe.. 

Anyway, I am not here to discuss about what is a healthy snack, I am here to share my latest craving recipe, so for the love of rendang and nachos, here is Rendang Nachos...

Ingredients: 
1/2 kg of pre-made rendang (you can have the recipe from here, or cook it using an instant mix package)
a bag of tortilla chips

Simple salsa: 
1/2 red onion, chopped
1 or 2 tomato, chopped
1/2 yellow bell pepper, chopped
salt
Jalapeno, optional (I skipped this one because the rendang is already spicy enough for me)
1/4 cup cilantro leaves or parsley (finely chopped), I skipped this one as well

Combine all the salsa ingredients in a bowl and set aside for the flavor to mix

Toppings: 
1 cup of pitted and sliced black olive
1 ripe avocado, slice thin
500 gr shredded tex mex cheese 
sour cream

That's all the ingredients I used, now let's assemble this awesome dish!
  1. Arrange the tortilla chips on the bottom of a big platter (I used the one to bake pie),
  2. Grab a spoonful of rendang and spread it evenly on top of the chips, 
  3. Sprinkle a layer of the shredded cheese, 
  4. Sprinkle a spoonful of black olives,
  5. Throw another layer of tortilla chips,
  6. And another layer of rendang, 
  7. And sprinkle another handful of the shredded cheese,
  8. Put the nachos platter in a preheated oven (350 F) for 10 minutes (or until the top layer of cheese is melted), 
  9. Take the nachos platter out of the oven and sprinkle all the toppings and the simple salsa to cover the surface of the nachos, 
  10. Spoon few dollops of the sour cream on the nachos too,
  11. Turn on netflix and enjoy this yummy nachos while enjoying your favorite film, live is good!!

PS: You can nuke the nachos instead of put it in the oven to melt the cheese, take less time although not as good.
