Corn and Edamame Salad

Nice colorful salad, healthy and easy. When you need vegetable as side dish yet you are lazy like me, this recipe can be the savior of the day. 


Ingredients:

1 canned corn kernels,
1 cup of edamame,
1 carrot, cut into tiny dice,
1 or 2 jalapeno, cut into tiny dice
1 scallion, thinly sliced, 
roasted sesame seeds (optional)


Dressing:

2 tbsp Mayo
half Tbsp Rice vinegar
few drops of sesame oil
a pinch of sugar
salt and pepper to taste
Wisk all the dressing ingredients in a mixing bowl until the sugar is diluted. Taste and adjust to your taste.


Step:

1. Prepare edamame according to the package instruction, drain thoroughly, 
2. Drain the corn thoroughly too, 
3. Combine corn, edamame, diced carrot and diced jalapeno in a bowl. Add dressing and toss to coat. Refrigerate until ready to serve, 
4. Sprinkle sliced scallion and sesame seed on serving.
