Spicy Moisty Cake with Cream Cheese

Spicy Moisty Cake with Cream Cheese


I love cheesecake and I love spice cake, so I decided to make this simple form of both cake together. It just perfect for my lazy autumn tea time. 



Cake Ingredients:
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar
2 1/2 cups bleached all-purpose flour
1/4 cup cornstarch
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract

1. In an electric mixer, mix butter and brown sugar until soft and creamy. 
2. In another bowl, mix dry ingredients; flour, cornstarch, baking powder, salt, ground ginger, ground cinnamon, ground nutmeg, ground allspice and ground cloves. 
3. In another bowl, mix milk, eggs and vanilla extract. 
4. Add the dry ingredients into the butter and beat first on low, then medium speed until mixture forms pebble like crumbles. Add in the milk mixture, 1/3 portion at a time and beat on low speed. Add the remaining milk mixture and increase the speed to medium until batter is smooth. 
5. Divide the batter into 2 greased and lightly floured round cake pan.  
6. Bake in preheated oven, 350 F for 40 minutes or until toothpick comes out clean when you poke your cake. 
7. Let the cakes cool down, meanwhile you can prepare the cream cheese spread.


Cream cheese ingredients:
1 package ( 3 ounces) of cream cheese, I used Philadelphia brand
1/3 cup melted butter
2 cups of confectioner sugar
1 Tbsp of milk

1. In an electric mixing bowl, mix the cream cheese and butter. Gradually mix in the confectioner sugar and milk until the mixture is spreadable.

Decorate the cake:
1. Once the cakes are cool, it will be easy to take out from the pan. 
2. Place one cake then layer the top evenly with a half of the cheese cream mix then put the other cake on top, and layer the surface with the last portion of the cheese cream mix evenly.

PS: you can put flavoring on your cheese cream mix if you want to.
