Citrusy Avocado Pie
I love avocados, it is such a versatile ingredients with rich flavor. It is good for salad, condiments, even desserts! This avocado pie is very easy, I didn't even have to cook the pie filling!
Ze Crust Ingredients:
I have uploaded a recipe on making pie crust for dessert on the previous entry.
Pie Filling:
2 ripe avocados, remove from the skin and cut into dice
1 lemon, zest and juice
1 limes, zest and juice
1 limes, zest (optional for decoration)
1 can of sweetened condensed milk
Mint leaves (optional)
1. In a big bowl, mix the lemon juice, lime juice, the zests and condensed milk until well blended.
2. Put the avocado into the milk mixture then mash the avocado with a fork. I like to have a tiny chunk of avocado in my pie so I didn't mash the avocado thoroughly. Blend the mixture until even. If you want to have a creamy smooth chunk-less filling, prepare it in a blender.
3. Pour the filling into the pie crust that you have prepared before. Spread evenly.
4. Decorate the pie with sprinkl of remaining lime zest and mint leaves.
5. Let the pie cool in refrigerator for about 2 hours.
PS: Altho the recipe doesn't require cooking the pie filling, trust me, the filling will solidify after refrigerated.
You can use the store-bought pie crust to save some times.
