Kastengel [ Savory Cheese Cookies ]
I have some food that I associate with holidays. This cookie is one of them. When I was a kid, my mom bake this cookie only once a year, on Ramadhan, its one of our staple cookies during the festivity. To revive that childhood's Ramadhan atmosphere, I tried to make this cookies myself and it turned out perfect!
Ingredients:
150 gr flour
¼ Tsp baking powder
25 gr maizena
125 gr melted butter (I used salted one)2 egg yolks
100 gr grated gouda cheese
For decorating:
1 battered egg yolk
½ cup grated cheddar cheese
1. Shift flour, maizena and baking powder in a bowl. Mix well.
2. In a mixing bowl, mix butter and egg yolk until well corporated, then add the grated gouda. Mix again on slow for a minute.
3. Slowly add the flour mix into the butter mix and knead the mixture together. Don't over knead it so the grated gouda doesn't crumble too much into smaller pieces.
4. Roll the dough on a floured surface and shape them with cookie cutter or simply cut into small rectangle about 1 x 4 cm.
5. Preheat the oven to 350 F /180 C.
6. Place a baking sheet on the baking tray then place the cookies on it.
7. With cooking brush, bast each surface of the cookies with egg yolk and sprinkle with grated cheddar.
8. Bake the cookies for about 15-20 minutes until the cheddar on top looks brown on it edges.
9. Once its cooked, set aside and let cool. Keep it in an airtight jar.
