Makaroni Skutel [ Macaroni Casserole ]
I just can't get enough of cooking casserole! Its easy and it makes left over for the next day lunch.. This casserole is a classic in my family. My mom always make it at least once when I was still living with herand it easily became one of my comfort food.
Ingredients:
3 cups of macaroni (I used fusili)
1 Onion, finely chopped
3 garlic, finely chopped
1 tbsp butter
500 gr ground meat
1 cup diced carrot
1 cup corn kernel
1 cup button mushroom, diced
¼ cup pitted olives, cut in 3 (optional)
½ cup of diced red bell pepper
½ Tsp white pepper
½ Tsp nutmeg
4 clove buds or ½ Tsp powdered clove
1 Tsp beef broth powder or salt
5 sheets of bacon, thinly sliced (I used chicken bacon)
4 eggs
200 ml milk
100 ml cream
2 cup shredded cheese (I used mix pack of pre-shredded cheddar and mozarella)
Cooking step:
- Boil 3 cups of macaroni until al dente, set aside,
- Sautée onion and garlic in butter in a big pan until the onion turns translucent,
- Add the meat, white pepper, nutmeg, cloves and salt, stir well,
- Add carrot, mushroom and corn. Stir well. Be careful not to make the veggies too soft in this stage otherwise it will get overcooked after baking,
- Stir in half of the bacon,
- Taste the mixture for saltiness, adjust to your taste, close the stove and put the mixture aside,
- Stir in the boiled macaroni and olives,
- In a bowl, mix the eggs, milk and cream together,
- Pour the egg mix into the meat, stir well. Stir in 1 cup of shredded cheese. Stir well,
- Spread the mixture evenly onto a pyrex. Sprinkle the rest of the bacon and shredded cheese evenly on top,
- Bake for 25 minutes in the oven on 350 F,
- Continue baking for another 5 minutes on convection or just until the surface turns golden,
- Et voila, serve with ketchup aside.
