Simple Vegetable curry

Quick vegetable side dish. You can toss in whatever veggies you have in the fridge and it will all come out tasty!
1 Onion, cut thin
2 Cloves garlic, finely chopped
1 Tbsp ginger, finely chopped
1 Tbsp Soya sauce (Chinese soy sauce)
1 Tsp Tumeric powder
Salt and pepper to taste

2 carrot, peeled and cut into thin strips

½ cup of edamame bean
1 Red bell pepper
1 cup white toffu, cut into thin strips
½ cup grated fresh coconut + ½ cup coconut water (or simply use ½ cup coconut milk)

1. Sautée onion and garlic until fragrant
2. Add ginger, soya sauce, tumeric powder
3. Toss in carrot, edamame, bell pepper, toffu and grated fresh coconut. Salt and pepper to taste.
4. Cover the pan and reduce the heat and continue cooking until the vegetables soften. No need to add water.

ps: if you want to have a little spicy kick, chop some Thai chillies and add it in.
