Beef Tongue Tacos, Tacos de Lengua de Res



I have always love tacos but last month I tasted beef tongue tacos at one of the mexican restaurants in Montreal, and it ah-maaaa-ziiiing!! Seriously, I can't get back to normal tacos. I have been always a big fan of beef tongue dishes, but putting it in tacos was never occured to mind. The tongue was well prepared, perfectly charred on the outside but juicy in the inside. 

Since I can't find this dish in Quebec city, I decided to make it myself, with a bit of Asian touch, of course!

Ingredients to prepare the tongue:
1 beef tongue, properly cleaned
2 fresh lemon grass, bruised
3 thai Chilli
3 slice of galangal, 1 cm thick each
5 kaffir lime leaves

Grill sauce:
2 tbsp ketjap manis
2 tbsp Japanese soy sauce
1 tbsp rice vinegar

Mix everything in a bowl, then set aside

Optional garnishes:
Soft tortilla
Salsa (fresh or store bought)
Feta cheese, crumbled
Chopped red onion
Chopped cilantro (optional, I didn't use it)
Wedges of lime
Wedges of avocado (you can replace it with guacamole)

Cooking steps:

  1. Put the tongue, lemon grass, chili, galangal, and kafir lime leaves in a pressure cooker, add water until the tongue is mostly covered. Strictly follow the instructions of your cooker,
  2. Clasp down the lid and turn on the heat to the highest (mine is stove top pressure cooker, so it was the stove heat that I turned on to the max), 
  3. Let the pressure cooker do its job until it hisses like an angry snake hyperventilating. Turn down the heat and continue cooking for about 30 minutes, or more, depending on how thick is the tongue,
  4. Remove the lid carefuly, strain the tongue, then dip the tongue into icy cold water to cool it down a bit,
  5. Peel the tongue. If you cook it right, the skin should slip off easily, 
  6. Slice the tongue to 1 inch thick, 
  7. Coat the tongue with the prepared grill sauce, 
  8. Grill the tongue on an iron skillet grill pan (or bbq grill) to get that sexy bbq lines on each side.



Assembling the tacos:

  1. Cut the grilled tongue into slices, 
  2. Right before serving/eating, reheat the tortilla in the microwave for afew seconds then lay it flat. Scoop a generous amount of the slices tongue onto the tortilla and garnish as desired.
Et voila! Best served with cold blond beer.
