Chocolate Cake with Nutella and Instant Coffee


Looking for a light fluffy chocolate cake with a soft, rich, and moist texture in the inside? Look no further, here I share you my favorite recipe! I separate the batter into two molds so I can put a thick slab of Nutella in the middle, because as well all know, Nutella makes everything better :)

I promise you, there is nothing complicated in this recipe and you might already have the ingredients needed in your kitchen. So here is the recipe:


Ingredients: 
2 cups of flour
1 1/2 cup of sugar
3/4 cup unsweetened cocoa powder (common cocoa powder for cooking)
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 sachet of instant coffee (one without pulp)
1 cup soy milk (you can use any kind of milk)
1/2 cup vegetable oil 
2 large eggs
2 tsp vanilla essence
1 cup of boiling water 
Confectioner sugar for decoration
A jar of Nutella, well we won't use the whole jar, but even if you do, I won't tell anybody

Cooking steps:
  1. Preheat oven to 350 F and grease two 9 inch cake pans with butter and lightly spring some flouring, 
  2. Add the dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, salt, and a sachet of instant coffee) in a stand mixer bowl. Whisk gently and thoroughly to combine,
  3. Slowly add the rest of the ingredients except the boiling water and whisk gently on medium speed, 
  4. Once the batter is well combine, slowly add the boiling water while continue mixing, 
  5. Once you are sure there is no clump in your batter, pour the batter into 2 greased mold evenly, 
  6. Bake for 30 to 35 minutes, or until a toothpick inserted in the middle of the cake comes out clean,
  7. Remove the cakes from the oven and let cool completely, 
  8. Remove the cakes from the mold. The cakes should have a bit of puffy top, cut the puffy top of one cake with a knife to make a flat surface, 
  9. Put a generous slab of Nutella on the surface of the cake you just cut and put the other cake on top, 
  10. Sprinkle confectioner sugar lightly using a sieve on top of the cake, 
  11. Et voila, the awesome chocolate cake is ready to be served. Remember, sharing is not obligatory! :)
