Bolu Kukus Ketan Hitam (Black Glutinous Rice Steamed Muffin)
Did I tell you that I was on a
diet this week? Well, I was and it lasted about half day, after that I was
done. I think letting myself hungry for the sake of someone else’s standard of
beauty is just not the way for enjoying this short (and supposed to be sweet)
life. I do need to shed a pound or two but I am not to the point that I’d
starve myself till I look pretty. Believe me, a starving me is faaar from
pretty, I’m a beast when I’m hangry, I’m the devil’s evil stepmom.
Giving up on diet doesn’t mean I
let myself loose tho. I still watch what I eat and how much I eat it. I am not
giving up on cake and dessert either, I just eat it less often. Ironically,
today’s recipe is a dessert recipe. Is it a healthy recipe?.. errr, maybe. Is
it low in calorie but high in vitamin?.. I don’t really know, but I am sure it
is not. Is it made out of organic/bio ingredients?.. it could be if you are a
fancy pants, but not me. Is it yummy?.. You bet it is!.. Is it easy to make?..
Oh heck yes for sure!.. So based on the
last two reasons, I whipped out this beautiful dark muffins.
Ingredients:
2 large eggs
150 gr sugar
1 tsp vanilla essence
1/2 cup melted butter
1 tsp baking powder
1 tsp baking soda
1 cup milk (or coconut milk)
250 gr black glutinous rice powder
Cooking step:
- Prepare your steaming device,
- Meanwhile, in an electric mixer, mix eggs and sugar on high speed until it turns creamy and light,
- Lower the speed, fold in a tsp of vanilla essence, melted butter, baking powder, and baking soda,
- Continue mixing and slowly add milk and black rice powder,
- Mix gently to make sure there is no clumps,
- Pour the batter into cupcake molds, I used alumunium cupcake molds lined with cupcake paper cups,
- Steam for about 20 minutes.

Have it for breakfast with a cup of milk, yum!!
