Today was one of those days in June when you still need to wear a long sleeved or a cardigan. There were not much activities can be done (comfortably) outdoor because the heavy cloud kept hanging above my head and ready to rain anytime. However, I went lake kayaking for a couple hours and got back home when the sky went dark and cloudy. I really can't wait for summer to starts.


I was pretty annoyed that I had to be at home this weekend. I work full time during the week and dwell with tight-scheduled routines, that's why I always look forward for weekends. I am sure many of you can relate to me on this one. Its a bummer if you can't go out and do outdoor activities on weekends. I ended up cooking this super easy to do (and easier to love) recipe. You might think that I am eating my emotion, but I am not. I just have a wee difficulty differentiating between hungry and bored (aren't we all?).

This steamed banana muffins definitely helped my mood. Its easy to make and requires simple ingredients. The best banana to use is the over-ripe ones, the yellow peels should at least half browned and the banana inside is mushy to touch. You know, the kind of banana you bought for your lunches but you keep forgetting it and it starts to rot in silent on your counter top but you feel bad to throw it away because your parents raised you well and taught you to never waste any food.

So lets make our parents proud and recycle our forgotten food :)

Ingredients:
3 overripe banana
200 gr brown sugar
250 gr flour (sieved)
1 tsp vanilla essence (optional)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 egg
100 ml milk
150 gr butter (melted)

 Cooking step: 

  1. In a mixing bowl, mash the overripe bananas with a fork until completely smooth, 
  2. Add sugar into the mixing bowl and mix it with an electronic mixer on medium speed, 
  3. Add vanilla essence (if you use any), baking powder, baking soda, salt, egg, and milk, continue mixing, 
  4. Once its all mixed in, stir in the flour, mix another couple of minute to make sure your batter has no clumps, add the melted butter and mix well,
  5. Pour the batter into muffin cups and steam for 20 minutes or until a toothpick inserted come out clean,
  6. Et voila, your banana steamed muffin is ready!

PS: Typical Indonesian steamed muffin usually has a very cracked and puffy top, as if the top has exploded. You can have this look if you fill out your muffin mold to the brim. I left mine half-full.
