Salad Kentang Jerman Halal [Porkless German Potato Salad]
Okay, once again I upload food that is not from my home country, but this potato salad is just soooo good I feel bad not sharing it with you. I made this last month for Octoberfest, everyone just loved it. Its super easy to make and tasty. As a big fan of potato salad, this definitely a cool choice to make, especially it has a good mix of sweet and sour taste and not as heavy as creamy potato salad. It won't override your main meal.
Ingredients:
6 cups of diced red skin potato
10 slices of turkey bacon, cut into small squares
1/4 cup of duck fat or butter
1 1/2 onion, diced
1/2 cup white vinegar
3 tbsp water
3 Tbsp white sugar
2 Tsp salt
1/4 Tsp ground black pepper
1 Tbsp chopped parsley
Cooking steps:
1. Boil potatoes in a pot. Cook until the potato is well cooked to the middle or is easily poked with a fork. Don't over cook. Drain and set aside to cool down.
2. In a big wok, melt the duck fat over medium heat and fry the turkey bacon until it becomes crispy.
3. Once the turkey bacon has become crispy, remove from the wok and put on a paper towel to absorb the oil so it won't turn soggy. Set aside.
4. Add diced onion to the duck fat or butter and cook over medium heat until browned. Add vinegar, water, sugar, salt and pepper to the pan. Bring to boil and continue cooking for about 3 minutes. Add the boiled potatoes, parsley and half of the turkey bacon, gently mix until all the ingredients are well incorporated. Cook a bit longer to heat through (or if you want it to have less sauce) then plate it on a serving dish.
5. Sprinkle the rest of the turkey bacon on top and serve while its warm.
