Watermelon Feta Salad


On summer, one of the best fruits to snack on is watermelon. Its sweet and juicy, very refreshing. Unfortunately, I usually end up with lots of left over (well you know how big that fruit is). I was thinking is there any way to use this fruit other than for snack and dessert, then I stumbled upon this interesting salad recipe: watermelon salad. Its super easy and super fresh. Yay! 
Ingredients: 

1 tsp salt
a pinch of coarse black pepper
1/4 cup olive oil (use virgin olive oil for a stronger taste)
4 lime wedges (lemon will do too)
1 small red onion, thinly sliced

6 cups fresh sweet and ripe seedless watermelon
1/4 cup feta cheese
1/4 cup sliced black olives
2 sprigs of mint, chopped
2 sprigs of lemon mint, chopped
2 sprigs of thyme, chopped
2 sprigs of oregano, chopped
2 leaves of fresh basil



1. To make the vinaigrette: on a salad bowl, mix olive oil, salt and coarse black pepper. Squirt the lime wedges and add red onion, stir gently and set aside,
2. Dice the watermelon and slightly crumble the feta cheese,
3. Put the diced watermelon, crumbled feta cheese and black olives into the vinaigrette bowl and stir gently, 
4. Sprinkle the chopped herbs (mint, lemon mint, thyme, oregano and basil), and stir gently and thoroughly, don't over mix it so melon and the feta cheese don't loose their shape,
5. Serve immediately or keep chilled until serving

PS: This salad really meant to be eaten quickly. Do not keep it too long in the fridge since it will become watery and it makes the salad not as fresh as it is suppose to be.
