Its cookies time! What else can I say more, this post simple about cookie recipe with mocha flavor. Yumm!! I consider this as adult cookies tho since I use real strong coffee, the caffeine it has might keep kids awake pass their bedtime, and none of us want that to happen, won't we?? 

Ingredients:
1/2 cup butter, softened
1/2 cup packed light brown sugar
2 tbsp coffee powder (I used java bean coffee fine powder)
2 tbsp cocoa powder
dash of salt
1 egg yolk
1 tbsp coffee liqueur (optional)
1 1/2 cups all-purpose flour

Frosting:
3/4 cup dark chocolate chips
1 tbsp butter

1. Cream butter in mixing bowl for 30 seconds,  
2. Add brown sugar, coffee powder, cocoa powder and a dash of salt. Beat till combined. You might need to scrap the sides time to times if needed,
3. Add in egg yolk and coffee liqueur. Beat for another 5 second then add the flour until the dough is thoroughly mixed,
4. In this stage, I found my dough is a bit too soft to shape. I roll the dough between two parchment papers and chill the dough in the fridge for around 15-20 minutes,
5. Heat oven to 350 degrees,
6. Shape the chilled dough with your fav cookie cutters,
7. Place the cookies on a baking tray, lined with a parchment paper,
8. Bake cookies for 12-15 minutes, or until the bottom of the cookies are lightly browned.
9. Place the baked cookies on a rack and let it cool down.

Once the cookies are cool, prepare the chocolate frosting:
1. Melt butter and dark chocolate chips in microwave for a few second (or you can use bain-marie method),
2. Mix the frosting with a spatula, make sure all the choco chips are completely melted.
3. Decorate your cookies top with the frosting as you like.
4. Put the decorated cookies back onto the rack, allow it to dry.
5. Store your pretty cookies in a tight sealed jar at room temperature
