Simple Vanilla Cake


Yesterday was totally dark grey and wet outside. It just perfect to have a nice hot tea with a decent vanilla cake while watching Sandra Bullock's movies. The only vanilla cake I ever made was angel cake kind of vanilla cake, and it was a store-bought mix. In this kind of weather, there is no way I'd brave the cold outside and run across the street to get some cake mix. My only chance is making the cake from scratch, and I did. It even turned out better then I expected. Its not a light, fluffy angel-cake like tho, its more like moist and heavy kind of cake.  My kind of cake :) 
Ingredients:
4 eggs
1½ cups (375 gr) sugar
1 Tbs vanilla extract (liquid)
¾ cup (180 ml) Canola oil
1 cup plain soya milk (dairy milk will do)
3 cups (750 gr) all purpose flour
1 Tbsp baking powder
a pinch of salt


Easy maple frosting:
1 cup of confectioner sugar
1 tbsp of maple syrup
2 tsp melted butter

¼ cup of apple jam (or any other jam that has sourish taste)

Mix all the frosting ingredients in a bowl, if your frosting was still too thick, add a bit of milk until you reach the consistency that you like.


1. Preheat the oven to 180 °C (350 °F), put the rack on th middle position and butter two 20-cm (8-inch) round baking pans. Set aside.
2. In a bowl beat the eggs, sugar, and vanilla with an electric mixer for about until thick, pale and triple in volume. Drizzle in the oil while beating.
3.In another bowl, combine the flour, baking powder, and salt. Mix thoroughly and set aside.
4.Lower the electric mixer speed and add the dry ingredients alternately with the milk until the batter is smooth.
5. Divide the batter into the pans and bake for 50 to 55 minutes or until a toothpick inserted in the centre of the cake comes out clean.
6. Let cool for 15 minutes. Remove from the pans and let completely cool on a wire rack. Cut and remove the one of cakes top to level the cake before decorating.
7. On a decorating plate, place the leveled top cake and spread the apple jam evenly. I made mine with a thick layer of jam.
8. Make the frosting.
9. Stack the other cake on top of the jam layer and decorate the top with frosting and fruits.

PS: I am using soya milk only because I don't consume dairy milk anymore. It doesn't serve any other means than that.

  1. I baked this cake for valentine day last year and it was so yummy even though the decoration I made was not as beautiful as in picture. Yet, I will make it again soon, valentine day is coming :)
