Green Peas Soup

Okay, this is a non-brainer, fail-proof soup, its very easy its almost embarrassing but then again, who doesn't love easy recipe?? 

2 L chicken bouillon
750 gr green peas
1 potato, peeled
1 leek
Salt and pepper to taste

To garnish:
Stir fry meat
Fresh cheese curds
Mint leaves (to decorate)
Créme fraiche (I didn't use)

1. Put all the ingredients in a pot and bring to boil
2. Once it boils, reduce the heat to medium and continue cooking until the pea tender.
3. Remove the pot from the stove. Pour a batch of the soup into a blender, when you put the lid on, make sure you don't cover the spout for pouring. Cover the spout with a kitchen towel, this is for releasing the steam from the hot soup and prevents the lid from popping off. Purée the soup in batches until smooth.
4. Transfer the soup to a serving bowl
5. Garnish and serve
