Pasta with Sausage and Veggies Sauce


This dish has all the good simple stuff I love; sausage, mushroom, carrot, bell pepper, corn and pasta.
Ingredients:
4 cups short pasta, I used rotini kind (boiled, drained and set aside)

Sausage  and veggies sauce:
4 links of your fav sausage, cut into coins
1 onion, finely chopped
2 garlic cloves, finely chopped
2 tbsp olive oil
1 carrot, julienned
250 gr button mushroom, cut in 6 or 8
1 red bell pepper, cut into thin strips
1 fresh tomato, cut in 4
½ can kernel corn
1 tsp dried oregano
½ tbsp balsamic vinegar
1 tbsp powdered beef broth, dissolved in 150 ml water
fresh ground pepper
1½ tbsp flour dissolved in 2 tbsp water
Scallion, finely chopped or shredded mozzarella to sprinkle on serving


1. Saute onion and garlic with olive oil until fragrant on medium heat.

2. Toss in the sausage and carrot. Close the lid for 5 minutes.
3. Toss in the mushroom, red bell pepper, tomato, dried oregano, balsamic vinegar and ground pepper. Reduce the heat and close the lid for another 5 minutes or until the carrot soften.
4. Pour in the beef broth and stir well. At this point, your sauce has a lot of liquid, almost soup-ish like, to thicken it, pour in the dissolved flour and bring to boil. Keep stirring. Once you get the sauce thickness you like, turn off the stove.
6. Serve the boiled pasta on serving plate and pour a heap amount of the sauce on top. Sprinkle with scallion or cheese.

PS: this mix fed 2 adults, 2 piglets and 2 lunch boxes for the next day. Yay!
