Bebong saus ketjap manis [ Pork with Spices and Soya Sauce ]
Ingredients :
500gr Cubed Pork Meat
500gr Cubed Porkbelly (some people call it SamCan , meat with thick fat) , I prefer without skin ...
6 Cloves Garlic , chopped finely
3 Shallots (medium) , chopped finely
1 Tbsp (15 ml) nutmeg powder
1/2 tsp Cinnamon powder
4cm Peeled Ginger and Smash
3 Cloves
Salt
Pepper powder
1 Anise Star
4 Tbs (60 ml) vegetable oil
4 Tbs (60ml) Medium Dry Sherry (optional)
10 Tbs (150 ml) Sweet Soya sauce / Ketjap Manis
1. Sautée Garlic and Shallots until, they fragrant and the colour changed in a deep pan.
2. Add the meat and ginger ,, stir evenly .. about 3 minutes
3. Add some hot water until it soaked.
4. Add Anise, Cinnamon, Nutmeg, Salt and Pepper
5. Stir evenly and let it cooks slowly, put the lid on...
6. When the water reduced and meat getting tender.. Add the Soya ( ketjap) also the Sherry..
7. Wait until the ketjap absorbed well ... about 15minutes or more, depends how thick the sauce you want.
8. Serve with hot white rice...
You also can make this with beef .....
