Grilled Chicken Sesame on Pho Soup

Grilled Chicken Sesame on Pho Soup


Last night I made Chicken Sesame to cook on the stone. It was delicious but it didn't last long enough for me to take picture. However, I have some left over for tonight`s meal. I decided just to grill it on Bbq and made spicy soup Pho style to go with it.



Ingredients:
6 pieces of deboned chicken thigh, cut into long strips
1 pack of bean vermicelli, blanched
1 ½ cups of bean sprout
1 Scallion, chopped (for garnish)

marinade sauce for the chicken:
3 Cloves garlic, finely chopped
2 cm fresh ginger, finely chopped
3 Tbsp soy sauce (Chinese Soy sauce)
1½ Tbsp Kecap manis (or honey or brown sugar)
1 Tbsp rice wine
1 Tbsp lemon juice
½ Tbsp sesame seeds
black pepper

1. In a container, mix all the marinade sauce thoroughly. Throw in the chicken and mix well. Refrigerate for minimum 30 minutes (the longer the better).
2. Grill it on bbq for about 15 minutes, turn the chicken side every 7 minutes.
3. Cut the chicken into cubes.

meanwhile when you are waiting for the chicken to marinade, prepare the soup Pho style.

Pho soup:
1 onion, cut in half. No need to peel it.
3 inches of ginger, unpeeled
2 liter of chicken bouillon

Broth:
2 Tbsp whole coriander seed (1 tbsp powdered corriander seed, if possible, put it in a tea bag to keep the broth clear)
4 whole cloves
2 whole star anise
1½ Tbsp sugar
2 Tbsp fish sauce
salt and pepper to taste


1. Place onion and ginger on a baking sheet, broil for 15 minutes. Turn the side every 7 minutes. This is to get char effect. Make sure you put it near the heating element. Once its done, peel off the skin.
2. In a stockpot, fill in chicken bouillon and boil. Throw in the peeled onion, ginger and all the broth spices. Once again bring to boil. Once it boils, reduce heat and continue cooking for 20 minutes. If you are using chicken bone to get the broth, cook longer to get the rich and flavorful chickeny taste out.


Serving: 
1. In a serving bowl, put the bean vermicelli and bean sprout. Add 1 cup of the boiling broth.
2. Put the chicken on top and garnish with chopped scallion.

PS: The chicken sesame itself is a very tasty dish. It works very well served with rice if you don't feel like cooking the soup.
